I created a soup recipe one week after I turned seven; I call it "ANNA's TOMATO SHRIMP SOUP"
I was inspired by Mommy's great cauliflower soup and Daddy's Italian cooking. Daddy just did exactly
what I said with no suggestions:
- I fill a measuring cup with water up to the 4 and put it into a big pot
- I ask daddy to get four big tomatoes (Roma/Plum tomatoes)
- I ask daddy to cut them in half
- I squeeze them while rubbing them together (juice goes into the pot)
- I ask daddy to cut the squeezed tomatoes into tiny bits
- I need some spices, so I get 20 big leaves from fresh sweet-basil plant we planted
- I ask daddy to squeeze leaves together on cutting board and cut them up into little pieces
- I boil tomatoes, leaves, water and a little bit of oil (4 Tblspns of extra virgin)
- I start stirring
- but first I add a little butter (~1/2 Tblspn)
- and I add some more water (~1/2 cup)
- I add some good sea salt (Mediterranean) and some good pepper (fresh ground)
- I start stirring again
- I cook it for a while with the lid on the pot (on medium-high 10 minutes)
- I ask daddy to caramelize onions in a separate pan (4 diced medium yellow cooking onions)
- but first I coat pan with oil (extra virgin)
- and I add a little butter for flavor" (~1/2 Tblspn)
- After pot boils for 10 minutes, I add frozen shrimp (15 frozen, de-shelled, de-veined, medium, raw)
- I boil pot until shrimp looks cooked (I give daddy one to eat when I think they look cooked)
- I take the pot off of the heat until the onions in the pan look caramelized
- I add caramelized onions into the big pot, put on the lid, and cook for another 10 minutes (I set the timer)
- I set up the blender while I'm waiting 10 minutes
- I ask daddy to help me blend hot soup (we needed to fill it 1-1/4 times)
